Chef Nick Honeyman to take over Le Cirque Signature for a pop-up

The Auckland-based chef is visiting Bengaluru and tells us about his plans

Chef Nick Honeyman is chef and owner at Paris Butter in Auckland, and also at the seasonal restaurant Le Petit Léon in France, a Michelin Award winning establishment. This week, the chef takes his first trip to India for a two-day pop-up at Le Cirque Signature in Bengaluru. “We just want to see and eat as much as possible,” he tells us about his plans in the country.

Nick’s biography takes us all across the world. He was born and raised in South Africa and went to Sydney to study to culinary school. His next stop was in Tokyo where he worked at Iron Chef Sakai Hirotia’s restaurant, La Rochelle. In his career he has also worked with Paris’ Michelin-starred chefs, Pascal Barbot at L’Astrance and Alain Passard at L’Arpège, Justin North at Becasse in Sydney, and Simon Wright at The French Café.

He now is the man behind Paris Butter which combines fine dining techniques, French cuisine, and New Zealand ingredients. He also hosts the TV show The Best of New Zealand with Nick Honeyman.  His other restaurant Le Petit Léon is run with his wife, and sommelier Sina Honeyman. It is located in the French countryside and is driven by local produce.

About the two-day pop-up he says, “Collaborations and pop-ups have become a huge part of what we do. We work, we talk, we share a glass of wine and trade ideas, stories and inspiration with our hosts. It is our way to continue our development and education. Each pop-up has a different energy and is always a special experience for the guests and us. The menu will feature delicate small bites, vibrant entrées with barbecued baby tomatoes, trout with ponzu, and elegant mains such as scallops in soy beurre blanc, or smoked lamb with black garlic.”

While in Bengaluru, the chef is eager to experience the city and has a well-researched itinerary. “We are looking forward to exploring places like Commercial Street, spices and vegetables at KR Market, Nagarjuna, Bangalore Palace and a few more which were suggested by a friend of ours.”
