Fresh green pigeon peas are a nutrient-rich produce. This curry has hints of sweet and spicy, and fresh grated coconut. Have it with rice or rotis.

Ingredients

Boiled pigeon peas - 1 cup
Finely chopped tomatoes – 1.5 cup
Finely chopped onions - 1 cup
Chopped Green chillies - 1-2 (adjust according to your taste)
Freshly grated coconut - 1/2 cup
Red chilli powder - 2 tsp (adjust according to your taste)
Turmeric powder - 1 tsp
Jaggery powder - 1 tsp (optional)
Cooking oil - 2 tbsp
Mustard seeds - 1 tsp
Cumin seeds - 1 tsp
Finely chopped coriander - 1 tbsp
Salt to taste

Preparation

1.Heat oil in a pan and add mustard seeds. Once they splutter add cumin seeds, chopped onions and fry till translucent.

2.Then add tomatoes, green chillies, turmeric and red chilli powder. Fry well till the oil begins to leave the sides of the pan.

3.Then add the boiled pigeon peas, salt, jaggery (if using) and mix well.

4.Add freshly grated coconut and stir for a few minutes. Garnish with finely chopped coriander.

5.Serve with rice or chapati.

6.Notes: You can skip coconut and add 2 tsp of garam masala powder instead. Let the peas be firm and not overly soft, hence cook them accordingly
